Turkey wings in a pressure cooker – The ultimate one-pot recipe

Turkey wings in a pressure cooker can taste 10 times better than the ones you bake in the oven. Although this may sound contradicting, you’ll notice the difference once you try this recipe yourself! The turkey wings cooked with a pressure cooker are not only flavorful but also very tender and super mouth-watering. Pair it with cornbread and jasmine rice and you’ll have for yourself the ultimate dinner!

Ingredients

  • Turkey wings (4 lbs)
  • Garlic (2 cloves, finely minced)
  • Onion (1 piece, finely chopped)
  • Salt (1 1/2 teaspoon)
  • Heavy cream (2 tablespoons)
  • All-purpose flour or cornstarch (2 tablespoons)
  • Water (1 cup plus 3 tablespoons)
  • Unsalted butter (3 tablespoons)
  • Chipotle (or regular chili powder) (1/4 teaspoon)
  • Onion powder (1 teaspoon)
  • Cumin (1 teaspoon)
  • Paprika (1 teaspoon)
  • Granulated garlic (2 teaspoon)

Step by step instructions

Saute the turkey wings

Step 1: Add chili powder, cumin, paprika, onion powder, granulated garlic and salt in a small bowl. Mix until well combined.

Step 2: Toss the turkey wings into the spice mixture. Flip to both sides so the wings can be well seasoned.

Step 3: On the pressure cooker, press the “Saute” button. Add about 2 tablespoons of oil to the cooker to prevent the wings from sticking to the bottom of the pot. Add the wings and the remaining spices, then cook for about 4 to 5 minutes (side down). Divide into batches so that the pot will not be overcrowded. While browning the turkey wings, watch out for splashing oil.

Step 4: Transfer the turkey wings to a dish and set aside. Add more oil to the pressure cooker if you have to. Then tip in the onions and cook for about 1 to 2 minutes. Scrape the bottom of the cooker using a wooden spoon. Add the minced garlic and cook for about 20 more minutes.

Step 5: Transfer the turkey wings back into the pressure cooker. Add butter and 1 cup of water. Press the “Cancel” button. Cover the cooker with a lid, seal the salve and continue cooking for 25 more minutes.

Step 6: Once time’s up, open the lid so that the steam can be released from the cooker. Also remove the turkey wings from the cooker. Place the wings evenly on separate plates for the steam to go away quickly.

Make the sauce

Step 1: In a separate small bowl, combine 2 tablespoons all-purpose flour and 3 tablespoons water and mix well. This will be the gravy (or sauce) for the turkey wings.

Step 2: Pour the flour mixture into the pressure cooker and press the “Saute” button. Let it cook for about 7 to 8 minutes, remember to whisk regularly. When the gravy becomes thick and nice, turn off the pressure cooker and pour in the heavy cream. Taste for seasoning check.

Note

  • Don’t over grease the inner pot of the pressure cooker. You can even eliminate oil from the recipe, as the turkey wings themselves will release fat. Oil will make the dish more creamy but if you want to save on calories, add the right amount of oil or leave it out.
  • After browning the turkey wings, add your favorite sauce into the pressure cooker.
  • The recipe can also work really well with chicken wings. They’re way smaller and the cooking time will be reduced significantly. It’ll probably take just about 10 minutes to reach the fall of the bone point.
  • You can cook whole wings or cut them in serving pieces, it’s up to your preference.
  • Marinate the turkey wings with spices overnight if you can. The meat will be extra flavorful.
